Crock Pot Potato Soup


2 lbs red potatoes, cut into bite-size pieces
1 cup baby carrots, cut in halves or thirds
1 stalk celery, chopped
1 onion, chopped
1 32oz. carton of chicken broth or stock
¾ cup milk
¼ cup corn starch

Saute onion in 1 tbsp butter until tender.  Put onion, potatoes, carrots, celery and broth in crock pot.  Cook on high 3-4 hours or low 10-12 hours.  Mix corn starch into milk; add to crock pot the last half hour.

  1. I made this for dinner tonight, and it was yummy! Thanks for posting it when you did, because I think it was the ONLY recipe in the world that I actually had all the ingredients for. (other than all my upcoming dessert experiments, of course) I also added a bit of thyme to my soup, because I'm pretty much addicted to it. :)
